The key ingredient of this exquisite soup are black chanterelles (Craterellus cornucopioides), trombette dei morti in Italian, trompettes de la mort in French, and mustatorvisieni in Finnish.
Black chanterelles are those funnel-shaped little guys that many Italians tend to ignore while desperately hunting for porcini. At least, this is what my Ligurian friends told me when I took them mushrooming black chanterelles in a Finnish forest years ago (»God in heaven, are you saying that those are edible, too!«). And yes, I am saying that they are not only edible but delicious. So go and get them.
There's one more thing I just cant help addressing. It's the sad picture of the cooking pot above. I apologize to anyone whose feelings I might be hurting by criticizing his or her favorite cooking vessel in the picture, but I really can't understand why people waste their money on those no-good »non-stick« pots and pans. Whether cheap or expensive, titanium or ceramic, this or that, the bottom line is that they are always just a flash in the pan. Sooner or later but not very much later the coating gets worn away which is when you simply must ask the question: Where does it end up or is it really meant to be eaten? I've been using my cooking pots of stainless steel and my frying pan of cast iron for more than forty years and I can't see any reason why they couldn't be used another forty years. Sustainability is the word also when it comes to cookware.
Thanks to Juha Rämö for his exquisite mushroom soup from Finland! Finnish cuisine can be despised or scorned only by French and Italian bigheads, e.g. by morons like Jacques Chirac or Silvio Berlusconi. After all, I don't find there's contradiction between cuisine, soups and a page on a song by Claudio Lolli, may he rest in peace. By the way, is there any contradiction, say, with his passion for car races and for Gilles Villeneuve?
A song is never "pure". "Purity" is always dangerous. Anyway, as for "antiwar stuff", I just wondered where I talked about chanterelles in a page of this site.
